Southwestern Chopped Salad with Cilantro Lime Avocado Dressing

Serves: 10 servings
  • 1 Large head of romaine
  • 15 oz can black beans (rinsed and drained)
  • 1 large bell pepper (color of your choice, I used orange for contrast)
  • 1 pint cherry tomatoes (or 2 large regular tomatoes)
  • 2 cups frozen corn (thawed)
  • 4 green onions
  • Cilantro Lime Avocado Dressing (ingredients and directions below)
  1. Finely chop the romaine, bell peppers, tomatoes and green onions. Mix well. Then add the remaining ingredients and mix again.

Cilantro Lime Avocado Dressing
  • 1 cup loosely packed cilantro
  • ½ ripe avocado
  • 2 Tablespoons lime juice
  • 2-3 cloves of garlic
  • ¼ cup extra virgin olive oil
  • 1 ½ teasoons white vinegar
  1. Place all dressing ingredients in a food processor and puree until smooth.
  2. Pour dressing over salad and mix thoroughly.
