Southwestern Chopped Salad with Cilantro Lime Avocado Dressing

Ingredients
- 1 Large head of romaine
- 15 oz can black beans (rinsed and drained)
- 1 large bell pepper (color of your choice, I used orange for contrast)
- 1 pint cherry tomatoes (or 2 large regular tomatoes)
- 2 cups frozen corn (thawed)
- 4 green onions
- Cilantro Lime Avocado Dressing (ingredients and directions below)
Instructions
- Finely chop the romaine, bell peppers, tomatoes and green onions. Mix well. Then add the remaining ingredients and mix again.
Cilantro Lime Avocado Dressing

Ingredients
- 1 cup loosely packed cilantro
- ½ ripe avocado
- 2 Tablespoons lime juice
- 2-3 cloves of garlic
- ¼ cup extra virgin olive oil
- 1 ½ teasoons white vinegar
Instructions
- Place all dressing ingredients in a food processor and puree until smooth.
- Pour dressing over salad and mix thoroughly.
