Wheat Berry Salad on Plate

Colorful Wheat Berry Salad

Serves: 4-6
  • 1 cup of dry wheat berries
  • ½ cup of crumbled feta
  • ½ cup diced red onion
  • ½ cup diced seeded cucumbers
  • ½ cup of drained bottled roasted red peppers , diced the size of the other ingredients
  • ½ cup pitted kalamata olives, diced the size of the other ingredients
  • 5 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 table spoons of red wine vinegar
  1. Place wheat berries in a pot and cover so there is about two inches of water over them. Bring to a boil and let them boil uncovered for about an hour or until tender. Drain the wheat berries in a strainer and let them cool. Once they are cooled, place them in a large bowl and mix in the feta, onion, cucumbers, red peppers, and olives.
  2. In a separate bowl whisk the olive oil, lemon juice and red wine vinegar. If you have a small electric hand mixer/blender, that works great too! Once the dressing is well blended, pour it over the mixture wheat berry mixture. Stir well to incorporate and cover all the ingredients with the dressing.
