Zucchini Nut Bread

Ingredients
- 3 cups of whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 eggs
- 1 cup all natural applesauce (no sugar added)
- 4 tablespoons Stevia or Truvia
- 3 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
Instructions
- Spray two 8 x4 inch or 9x6 inch bread pans with cooking spray.
- Preheat oven to 325 degrees.
- Put flour, salt, baking powder, baking soda and cinnamon in a bowl and mix together.
- Beat eggs, applesauce, vanilla, and Stevia together in a large bowl.
- Gradually add sifted ingredients to creamed mixture and beat well.
- Stir in zucchini and nuts until fully combined.
- Pour half of the mixture into each of the two pans and shake to make the batter evenly distributed.
- Bake for 30-35 minutes if you use the larger pan size or 35-45 minutes for the smaller pan size or until golden brown on top and a toothpick inserted into the center of the loaf comes out clean.
- Cool in pan about 20 minutes.
- Remove the loaves from the pans and allow them to cool completely (or eat a piece while it’s warm!)
- If the loaves stick to the pan, just run a firm spatula or knife around the edges to help them come out.
