Zesty Black Bean Burgers

Ingredients
- 1 15 ounce can of black beans (washed and well drained)
- ½ cup chopped onion
- 1 clove of garlic
- 1 cup mushrooms, diced
- 1 cup fresh spinach, chopped
- 2 teaspoons of extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon paprika (I like Spanish vs. smoked, but use what you prefer)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon cayenne pepper
- 2 pieces of whole wheat bread
- ½ cup olives (I used Kalamata, but use whatever kind you prefer)
- Cooking spray
Instructions
- Preheat oven to 350 degrees.
- Tear up the whole wheat bread and process it into bread crumbs.
- Remove the bread crumbs from processor and put them in a bowl.
- Place the olives in the food processor and chop into small pieces. Remove from processor and place in a separate bowl. Wipe the bowl of the processor so it’s not wet inside.
- Place the garlic, onion, mushrooms and spinach in a food processor or food chopper and mince.
- Take the two teaspoons of olive oil and put them in a pan.
- When the oil is hot, add the garlic, onion, mushrooms and spinach mixture from the food processor to the pan.
- Transfer the pan cooked mixture to the food processor.
- Add the black beans, balsamic vinegar and spices. Pulse until combined.
- Add 1 cup of the cup of bread crumbs to the food processor. (You may have more, but only use 1 cup.) Pulse until combined.
- Line two baking sheets with aluminum foil or parchment paper and spray with cooking spray.
- Divide the mixture into 12 even patties, about ¼ inch thick. I put 6 patties on each sheet so they were not too close together. That spacing makes them easier to flip.
- Bake for about 20 minutes or until they are golden on top.
- Flip the patties and bake another 20 minutes. (The patties will be somewhat soft. I found it helpful to use two spatulas to flip them. I used one to scoop underneath the patties and the other to help me guide the patties onto the spatula so they stayed together better and were easier to flip.
- Serve on a whole wheat bun with your favorite condiments, such as lettuce, tomato and onion.
