Stuffed Mushrooms

Stuffed Mushrooms
Recipe type: Appetizers and Side Dishes
Serves: 8-12
  • 24 mushrooms, stems removed
  • 2 (10 ounce packages) frozen, chopped spinach (use only 1 package if you don’t want the mushrooms piled high and very stuffed)
  • 2 ounces of Neufchatel cream cheese (You can use fat free cream cheese but it’s much more processed.)
  • ½ cup of finely chopped green onions with tops (optional)
  • 4 ounces of feta cheese
  1. Preheat oven to 350 degrees
  2. Wipe mushroom caps with a clean, damp paper towel. Thaw spinach in a colander and squeeze out as much water as possible.
  3. In a mixing bowl, combine all the ingredients except the mushrooms and mix well.
  4. Fill the mushroom caps with the mixture and place on a cookie sheet.
  5. Bake 15-20 minutes. Serve hot.
  6. Note: The mushrooms can be reheated in a microwave if you have left overs.
