Spinach Salad
(This salad can be eaten as an entrée or served family style)

Ingredients
- 5 cups of fresh baby spinach
- 2 hard boiled eggs
- 2-3 pieces of turkey bacon
Instructions
- Place the baby spinach leaves on a plate or in a big bowl.
- Slice the hard boiled eggs (with an egg slicer if you have one or a knife)
- Cook the turkey bacon in the microwave until done (so it crumbles easily)
- Place the sliced hard boiled eggs and the crumbled turkey bacon on top of the spinach and serve with your favorite dressing. I use the Lighter, Healthier Caesar salad dressing.
