Spicy Crockpot Steak Fajitas
Note: You can cut the steak in strips before you put it in the Crockpot and make sure the marinade coats all the pieces. I find it’s easier to put the steaks in whole and cut them after they’re cooked.

Ingredients
- 3 pounds of top sirloin steak (Use any lean meat…beef, boneless pork loin or skinless, boneless chicken)
- 2 large onions, sliced thin
- 1 ½ cups of homemade salsa (or use a natural store bought brand)
- 4 tablespoons of lime juice
- 1 can (7 ounces) of chipotle peppers in adobo sauce, diced small
- 3 large cloves of garlic, minced
Instructions
- Place the onion slices so they cover the bottom of the crockpot.
- Place the steak on top of the onions.
- In a bowl, mix the salsa, lime juice, garlic and chipotles in adobo.
- Pour the mixture over the steak and coat both sides.
- Cook on low for 6 hours.
- Remove the steaks from the Crockpot and cut into small pieces.
- Place about 2-3 ounces of steak in a whole wheat tortilla.
- Remove the onions and use them to top the steak strips.
- Add other toppings of your choice such as fresh lettuce, tomatoes and guacamole.
