Spicy Crockpot Steak Fajitas
 
Note: You can cut the steak in strips before you put it in the Crockpot and make sure the marinade coats all the pieces. I find it’s easier to put the steaks in whole and cut them after they’re cooked.

Ingredients
  • 3 pounds of top sirloin steak (Use any lean meat…beef, boneless pork loin or skinless, boneless chicken)
  • 2 large onions, sliced thin
  • 1 ½ cups of homemade salsa (or use a natural store bought brand)
  • 4 tablespoons of lime juice
  • 1 can (7 ounces) of chipotle peppers in adobo sauce, diced small
  • 3 large cloves of garlic, minced
Instructions
  1. Place the onion slices so they cover the bottom of the crockpot.
  2. Place the steak on top of the onions.
  3. In a bowl, mix the salsa, lime juice, garlic and chipotles in adobo.
  4. Pour the mixture over the steak and coat both sides.
  5. Cook on low for 6 hours.
  6. Remove the steaks from the Crockpot and cut into small pieces.
  7. Place about 2-3 ounces of steak in a whole wheat tortilla.
  8. Remove the onions and use them to top the steak strips.
  9. Add other toppings of your choice such as fresh lettuce, tomatoes and guacamole.
