Spicy Black Bean Patty and Egg Breakfast Sandwich

Ingredients
- 1 Spicy or Zesty Black Bean Burger Patty (See the recipes in the entrée section of our web site.)
- 1 Egg or 2 egg whites
- 1 Whole wheat bagel thin, whole wheat sandwich thin or whole wheat English muffin
Instructions
- Toast your whole wheat bread of choice.
- Coat a microwave safe, single-serving custard bowl, ramekin or coffee cup with cooking spray.
- Beat egg or egg whites in the sprayed bowl.
- Microwave egg for 60 seconds.
- Warm black bean patty on a microwave safe plate for about 30 to 69 seconds in the microwave. (Ideally, you made the black bean burger recipe the night before for dinner and have extras.)
- Remove egg from bowl and place it on the bottom half of your bread.
- Place the black bean patty on top of the egg.
- Put the top half of the bread on top of the patty to make your sandwich.
- Eat it now or wrap it in aluminum foil if you’re on the go and take it with you!
