Spicy Black Bean Patty and Egg Breakfast Sandwich

  • 1 Spicy or Zesty Black Bean Burger Patty (See the recipes in the entrée section of our web site.)
  • 1 Egg or 2 egg whites
  • 1 Whole wheat bagel thin, whole wheat sandwich thin or whole wheat English muffin
  1. Toast your whole wheat bread of choice.
  2. Coat a microwave safe, single-serving custard bowl, ramekin or coffee cup with cooking spray.
  3. Beat egg or egg whites in the sprayed bowl.
  4. Microwave egg for 60 seconds.
  5. Warm black bean patty on a microwave safe plate for about 30 to 69 seconds in the microwave. (Ideally, you made the black bean burger recipe the night before for dinner and have extras.)
  6. Remove egg from bowl and place it on the bottom half of your bread.
  7. Place the black bean patty on top of the egg.
  8. Put the top half of the bread on top of the patty to make your sandwich.
  9. Eat it now or wrap it in aluminum foil if you’re on the go and take it with you!
