Recipe type: Appetizers and Side Dishes
Serves: 10
Ingredients
  • 2 ½ cups of nuts of your choice (I prefer mixed nuts for variety)
  • 2 tablespoons of extra virgin olive oil
  • 1 ½ teaspoons of ground cumin
  • ¼ teaspoon of cayenne pepper (add more if you want more kick)
  • 1 tablespoon of Truvia or Stevia powder (I’d suggest Truvia with this recipe)
Instructions
  1. Preheat oven to 300 degrees.
  2. Place the nuts in a bowl.
  3. Pour the oil into a small, heavy saucepan and place over medium-low heat until warm.
  4. Add the cumin and cayenne and stir until the mixture is aromatic, about 15 seconds.
  5. Pour the flavored oil over the nuts.
  6. Add the Truvia or Stevia powder and stir to coat evenly.
  7. Transfer the coated nuts to a baking sheet so they’re in one layer.
  8. Bake, stirring or shaking the pan occasionally until the nuts are toasted, about 20 minutes.
  9. Store in an airtight container for up to two weeks or freeze and reheat later.
  10. Note: The nuts are best served warm. To warm them place them on a baking sheet and reheat for about 5 minutes at 300 degrees.
