Rosemary Marinated Portabella Mushroom Burgers

Ingredients
  • 2 large portabella mushrooms, stems removed
  • 10 tablespoons balsamic vinegar
  • 4 tablespoons dried rosemary, finely chopped
  • 3 cloves of garlic, finely minced (optional)
  • Pepper to taste
Instructions
  1. In a bowl mix the above ingredients, other than the mushrooms, in a small bowl until well incorporated.
  2. Place the mushrooms in a nonporous glass dish or bowl.
  3. Pour a bit of the mixture over the underside of the mushrooms, then flip the mushrooms over.
  4. Pour the rest of the mixture over the top of the mushrooms and rub the mixture over the mushrooms completely until they are dark and coated well.
  5. Let the mushrooms marinate for at least 30 minutes, preferably an hour in the refrigerator.
  6. Once marinated, let the mushroom come up to room temperature.
  7. Preheat grill for high heat.
  8. Brush or rub grate with a little olive oil, and arrange marinated mushrooms on hot grill.
  9. Turn after 2 to 3 minutes, and continue grilling until mushrooms are heated through and look a bit wilted.
  10. Serve hot off the grill on a whole wheat bun with the garnishes of your choice such as lettuce and tomato, guacamole or low fat Swiss cheese.
