Roasted Garlic Shrimp Over Fresh Spinach

Ingredients
- 1 pound peeled and deveined large shrimp (thawed if they are frozen)
- 3 tablespoons melted butter
- 4 cloves of fresh garlic, minced
- 1 tablespoon of fresh parsley leaves
- Fresh baby spinach, small prewashed container
- Fresh grated Parmesan cheese
Instructions
- Preheat oven to 450 degrees
- Combine butter, garlic and parsley.
- Pour over shrimp.
- Stir and coat completely.
- Spread shrimp in single layer on a 10” x 15” baking sheet.
- Cook for 4 to 8 minutes until the shrimp are done (turn pink.)
- Place over a bed of fresh baby spinach.
- Garnish with a little fresh grated Parmesan cheese.
