Roasted Garlic Shrimp Over Fresh Spinach

  • 1 pound peeled and deveined large shrimp (thawed if they are frozen)
  • 3 tablespoons melted butter
  • 4 cloves of fresh garlic, minced
  • 1 tablespoon of fresh parsley leaves
  • Fresh baby spinach, small prewashed container
  • Fresh grated Parmesan cheese
  1. Preheat oven to 450 degrees
  2. Combine butter, garlic and parsley.
  3. Pour over shrimp.
  4. Stir and coat completely.
  5. Spread shrimp in single layer on a 10” x 15” baking sheet.
  6. Cook for 4 to 8 minutes until the shrimp are done (turn pink.)
  7. Place over a bed of fresh baby spinach.
  8. Garnish with a little fresh grated Parmesan cheese.
