Quinoa and Black Bean Salad

  • 1 cup quinoa, uncooked
  • 2 cups water
  • ¼ cup extra virgin olive oil
  • 4 tablespoons of lime juice (about two limes)
  • 2 teaspoons ground cumin
  • ½ teaspoon red pepper flakes (more if you like things hotter)
  • 1 ½ cup halved cherry or grape tomatoes
  • 1 15 ounce can of black beans, drained and rinsed
  • 5 green onions, finely chopped
  • ¼ cup fresh cilantro
  • Pepper to taste
  1. Place the water and quinoa in a pan and bring to a boil.
  2. Reduce heat to medium-low and cover.
  3. Cook until water is absorbed, about 10-15 minutes
  4. Let the quinoa cool before mixing with other ingredients and dressing.
  5. Whisk olive oil, lime juice, cumin, red pepper flakes together in a bowl.
  6. In a separate bowl, combine the cooled quinoa, tomatoes, black beans and green onion together.
  7. Pour the dressing over the quinoa mixture and coat thoroughly.
  8. Stir in the cilantro.
  9. Season with pepper to taste.
  10. Serve immediately or chill in refrigerator.
