Quinoa and Black Bean Salad

Ingredients
- 1 cup quinoa, uncooked
- 2 cups water
- ¼ cup extra virgin olive oil
- 4 tablespoons of lime juice (about two limes)
- 2 teaspoons ground cumin
- ½ teaspoon red pepper flakes (more if you like things hotter)
- 1 ½ cup halved cherry or grape tomatoes
- 1 15 ounce can of black beans, drained and rinsed
- 5 green onions, finely chopped
- ¼ cup fresh cilantro
- Pepper to taste
Instructions
- Place the water and quinoa in a pan and bring to a boil.
- Reduce heat to medium-low and cover.
- Cook until water is absorbed, about 10-15 minutes
- Let the quinoa cool before mixing with other ingredients and dressing.
- Whisk olive oil, lime juice, cumin, red pepper flakes together in a bowl.
- In a separate bowl, combine the cooled quinoa, tomatoes, black beans and green onion together.
- Pour the dressing over the quinoa mixture and coat thoroughly.
- Stir in the cilantro.
- Season with pepper to taste.
- Serve immediately or chill in refrigerator.
