Nana's Noodle Kugel

Nana’s Noodle Kugel

Serves: 8
  • 1 stick of butter, melted
  • 1 Tablespoon of Truvia or Stevia powder
  • 3 eggs, separated
  • Juice of one fresh orange or 2-3 clementines, about 2-3 ounces
  • 16 ounces of fat free cottage cheese
  • 8 ounces of fat free sour cream
  • 8 ounces of wide/broad, whole wheat noodles (they usually come in 12 ounce packages)
  • 1 teaspoon of vanilla.
  1. Preheat oven to 350 degrees
  2. Cook the noodles according to package instructions. Drain and set aside.
  3. In a large bowl, cream the butter and Truvia or Stevia, add egg yolks one at a time and beat well. Add sour cream, cottage cheese, juice and vanilla.
  4. Fold the cooked noodles into the wet mixture in the large bowl.
  5. Then fold in the beaten egg whites.
  6. Bake in a greased (or cooking sprayed) oblong glass baking dish for one hour. Top noodles will be a little brown and crunchy, but the Kugel will be soft and tasty.
