Kale Salad with Lemon Tahini Dressing

Ingredients
- 5 cups kale, chopped or torn into small bite sized pieces
- 1- 15 ounce can garbanzo beans (rinsed, drained and dried)
- ½ cup sliced almonds
- ¾ cup edamame
- ½ cucumber, chopped into bite sized pieces
Instructions
- Mix all the salad ingredients in a large bowl.
- Wisk or blend the dressing ingredients in a separate bowl or in a food processor.
- Pour dressing over salad mixture and toss until all ingredients are coated in the dressing.
