Kale Salad with Lemon Tahini Dressing

Ingredients
  • 5 cups kale, chopped or torn into small bite sized pieces
  • 1- 15 ounce can garbanzo beans (rinsed, drained and dried)
  • ½ cup sliced almonds
  • ¾ cup edamame
  • ½ cucumber, chopped into bite sized pieces
Instructions
  1. Mix all the salad ingredients in a large bowl.
  2. Wisk or blend the dressing ingredients in a separate bowl or in a food processor.
  3. Pour dressing over salad mixture and toss until all ingredients are coated in the dressing.
