Herb Crusted Pork Loin

Ingredients
  • 1 (4 pound) boneless pork loin
  • 2 tablespoons of olive oil
  • 4 cloves of garlic (I tend to use more since I really like garlic)
  • 2 teaspoons of fresh minced thyme leaves (I don’t measure. I use an entire “packet” of packaged thyme)
  • 2 teaspoons of fresh minced rosemary leaves (I don’t measure. I use an entire “packet” of rosemary)
  • Note: I mince the garlic, thyme and rosemary in a small food processor and then add the oil to blend it thoroughly.
Instructions
  1. Preheat the oven to 475 degrees.
  2. Place the pork loin on a rack in a roasting pan. Use a baking sheet or broiler pan if you don’t have a roasting pan.
  3. Combine the remaining ingredients in a small bowl. With your hands, massage the mixture onto the pork loin, covering all the meat.
  4. Roast the pork for 30 minutes, then reduce the heat to 425 degrees and roast for an additional hour. Test for doneness using a meat thermometer. When the internal temperature reaches 150 degrees, remove from the oven. Allow it to sit for about 20 minutes before carving. The meat continues to cook as it rests.
