Green Glory Avocado Soup

Serves: 4 to 6
Ingredients
- 2 large avocados, peeled, pitted and quartered
- 8 green onions, cleaned and chopped
- 2 cups chicken stock or vegetable stock warmed
- 2 tablespoons of cilantro, chopped (pack the tablespoons full if you like cilantro as much as I do)
- 2 tablespoons of fresh lime juice
- ¾ teaspoon cumin
- ½ teaspoon chili powder
- 1 cup fat free half and half
- 4 to 6 sprigs of cilantro for garnish
Instructions
- Warm the stock in a pot on the stove on low heat.
- Place the avocado, green onions, lime juice, cilantro, cumin, chili powder, stock and fat free half and half in a blender until smooth.
- Don’t over-blend. Taste and adjust the seasonings as desired, if necessary.
- Serve at room temperature or cover and refrigerate for at least two hours and serve chilled.
- Garnish with the cilantro sprigs.
