Fast and Easy Microwave Tortilla Pizza
This is a great way to have pizza for lunch and it’s easy to pack for work if you measure and cut the ingredients in advance. The tortilla will not get crisp (at least it didn’t in my microwave.) I folded this like a taco or burrito to make it easier and less messy to eat at work. If you prefer a crispy crust, please see the tortilla pizza recipe that is made in the oven.

Ingredients
- 1 Whole Wheat
- ½ cup of fat free mozzarella cheese (You can use a low fat cheese too if you prefer.)
- Toppings of your choice (I made this a Caprese pizza with fresh tomatoes and fresh basil.)
Instructions
- Place tortilla on a microwave safe plate
- Sprinkle cheese thinly and evenly on the tortilla, but leave a small rim around the outside
- Add the toppings of your choice
- Microwave for 60 to 90 seconds until the cheese if fully melted
