Energy Bites
 
Note: I use Lilly’s dark chocolate chips (vegan) made with Stevia for guests. I use the 100% cacao nibs if I’m not serving these to others. I love the crunch and slight bitterness of the nibs.

Ingredients
  • ½ cup dark chocolate chips or 100% cacao Nibs or dark chocolate chips made with Stevia (not sugar)
  • 1 cup whole (old fashioned) oats
  • ⅓ cup honey (get real, natural honey, preferably from a beekeeper)
  • ½ cup of all natural, creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • ⅔ cup coconut flakes (toasted or untoasted. I used untoasted organic coconut flakes)
  • ½ cup ground flaxseed meal (I used Bob’s Red Mill brand which is sold at most grocery stores)
Instructions
  1. Mix the wet ingredients together, honey, vanilla extract and peanut butter (You may need to slightly warm/melt the peanut butter to make it a little easier to blend with the honey and vanilla.)
  2. Once the wet ingredients are combined evenly, add the remaining dry ingredients.
  3. Place teaspoon sized balls on a waxed paper or parchment paper covered cookie sheet. (It’s easiest to use a small, melon ball sized cookie scoop.)
  4. Freeze until firm.
  5. Store in an air tight container in the freezer.
