Energy Bites
Note: I use Lilly’s dark chocolate chips (vegan) made with Stevia for guests. I use the 100% cacao nibs if I’m not serving these to others. I love the crunch and slight bitterness of the nibs.

Ingredients
- ½ cup dark chocolate chips or 100% cacao Nibs or dark chocolate chips made with Stevia (not sugar)
- 1 cup whole (old fashioned) oats
- ⅓ cup honey (get real, natural honey, preferably from a beekeeper)
- ½ cup of all natural, creamy peanut butter
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
- ⅔ cup coconut flakes (toasted or untoasted. I used untoasted organic coconut flakes)
- ½ cup ground flaxseed meal (I used Bob’s Red Mill brand which is sold at most grocery stores)
Instructions
- Mix the wet ingredients together, honey, vanilla extract and peanut butter (You may need to slightly warm/melt the peanut butter to make it a little easier to blend with the honey and vanilla.)
- Once the wet ingredients are combined evenly, add the remaining dry ingredients.
- Place teaspoon sized balls on a waxed paper or parchment paper covered cookie sheet. (It’s easiest to use a small, melon ball sized cookie scoop.)
- Freeze until firm.
- Store in an air tight container in the freezer.
