Cinnamon Peach Muffins

Ingredients
- 3 Tablespoons of Stevia powder (or Truvia)
- 1 ½ cups all natural applesauce
- 2 eggs
- 2 ¼ cups fresh peaches peeled or frozen peaches, pureed
- 2 cups whole wheat flour
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
Instructions
- Preheat your oven to 325 degrees.
- Use cooking spray to coat your muffin pans.
- Beat the Stevia, applesauce and eggs until blended well.
- Add the cinnamon, baking soda, baking powder and vanilla and beat again until blended well.
- Add the whole wheat flour and beat until blended.
- Add the peaches and beat until blended.
- Use a spatula to scrape any unincorporated batter into the main batter until fully mixed.
- Spoon batter into muffin tin
- Cook about 15 minutes for mini muffins and about 20 minutes for regular muffins.
- Poke with a toothpick to make sure muffins are done. If toothpick comes out clean, remove from oven.
- Serve hot or let cool and serve at room temperature.
