Chocolate Chia Seed Pudding
Note: This doesn’t look appealing. But it is tasty and much healthier than traditional pudding. It looks a bit like tapioca pudding (but I can’t tell you if it tastes like that since I’ve never had it.) Also, I tried making this with skim milk and it didn’t work. Other recipes I’ve seen use almond milk.

  • ¼ cup chia seeds
  • ¾ cup fat free half and half
  • 1 tablespoon of unsweetened cocoa powder
  • 1 teaspoon of Stevia or Truvia
  1. Combine the chia seeds and fat free half and half with a whisk.
  2. Stir in the cocoa powder and Stevia (or Truvia.)
  3. Let the mixture sit overnight until it has thickened.
  4. Stir and spoon into a bowl or bowls.
