Caprese Salad with a Twist

Caprese Salad with a Twist
Recipe type: Soups and Salads
Serves: 4
  • 4 large fresh tomatoes
  • 1 log of fresh mozzarella (you can skip this if you prefer to save the calories or don’t eat dairy)
  • 2 cups loosely packed basil leaves (washed and dried thoroughly)
  • 2 tablespoons pine nuts (leave this out for those with nut allergies)
  • 2 tablespoons freshly grated Parmesan cheese
  • ¼ teaspoon of fresh minced garlic
  • ¼ cup plus 1 tablespoon of extra virgin olive oil
  1. Cut the tomatoes into slices (about ¼ to ½ inch thick)
  2. Cut the Mozzarella into slices that are the same thickness as the tomato slices
  3. Pesto sauce
  4. In a food processor, combine the basil, pine nuts, cheese, and garlic until smooth. Then drizzle in the olive oil until everything is incorporated and smooth.
  5. Place three tomato slices on a plate and top the tomatoes with the mozzarella. Put about a tablespoon of pesto on top of the mozzarella (or on top of the tomatoes if you’re not using the cheese to save calories) and enjoy.
