Blueberry Orange Bread

Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup water
- 2 tablespoons butter, softened
- 1 tablespoon Stevia (or Truvia if you don’t have Stevia)
- 1 large egg
- 1 orange, peeled and cut into small pieces, about ¼ inch by 1 inch
- 1 strip of orange rind, about ¼ inch wide and 3 inches long cut to the size of the orange pieces
- 1 cup fresh or frozen blueberries, thawed
Instructions
- Preheat oven to 325 degrees
- Spray a 9 inch by 5 inch (or whatever you have) bread pan with cooking spray
- Mix the whole wheat flour, baking soda, baking powder, salt in a large bowl.
- In your food processor, place the following ingredients into it in this order: water, butter, Stevia, egg, orange pieces and orange rind. Blend until the mixture is a smooth liquid. You may need to pulse your food processor to get the oranges to puree. NOTE: If you own a Vitamix or a Ninja, this mixture blends much better.
- Pour the orange mixture over the dry mixture and mix by hand with a spatula until all ingredients are moistened. Note: I find it’s easier to knead this with my hands. Once the dry and wet mixture are fully incorporated, fold in the blueberries with a spatula or your hands.
- Pour into the prepared bread pan.
- Bake for 45 to 55 minutes or until toothpick inserted into the center of the bread loaf comes out clean.
