Smoked Salmon and Egg Breakfast Sandwich
 
 
This sandwich is a great alternative to the various fast food breakfast sandwiches and it takes less time to make than it takes to wait in line in the drive through!

Ingredients
  • 3 ounces of smoked salmon (use a turkey sausage patty, spicy black bean patty such as Morning Star or vegetarian burger patty such as Boca Burger if you don’t like smoked salmon.)
  • 1 egg or 2 egg whites
  • ½ ounce of low fat Neufchatel cream cheese, just enough to lightly cover one side of your chosen bread(I prefer low fat cream cheese instead of fat free cream cheese because the low fat cream cheese is less processed.)
  • Fresh chives, chopped to taste (optional)
  • Whole wheat bagel thin, sandwich thin or English muffin
Instructions
  1. Toast your bread of choice.
  2. Coat a microwave safe, single-serving custard bowl, ramekin or coffee cup with cooking spray.
  3. Beat egg or egg whites in the sprayed bowl.
  4. Microwave for 60 seconds.
  5. Remove egg and place it on the bottom half of your bread.
  6. Place the salmon on top of the egg.
  7. Spread cream cheese on other side of bread
  8. Top the cream cheese with a sprinkling of chives (optional)
  9. Put the top half on top of the bottom half and make your sandwich
  10. Eat it now or wrap it in aluminum foil if you’re on the go.
