3 cups of fat free half and half
2 Tablespoons of Truvia or Stevia (NuNaturals brand, non-bitter is my favorite)
¼ cup of fat free powdered milk
1 teaspoon of vanilla
3 cups of fresh (or frozen, thawed) whole blackberries
Instructions
Whisk all the ingredients other than the blackberries together. Turn on the electric ice cream maker and slowly pour the mixture in the machine while the paddle is moving. While the mixture is churning, puree the blackberries in a blender or food processor until they are like a sauce, and free of whole berry pieces or small chunks. After the ice cream mixture begins to set up and is no longer pure liquid, usually about 15 to 20 minutes, slowly pour in the blended blackberries.
This ice cream will be more of a soft serve texture. Eat immediately or put in freezer safe containers and let it harden up. Once hard, it will still be more of an ice milk texture (less creamy than ice cream), but it’s very tasty!
Note:
You can use this same recipe to make strawberry ice cream or other fruit ice creams. Just substitute the 3 cups of whole blackberries for the whole fruit of your choice.
