Dark Chocolate Dipped Fresh Fruit

Ingredients
  • 1 quart of fresh strawberries
  • 3 clementines (segmented into individual pieces)
  • Note: You can use whatever fruit you like. I just think these two work very well
  • 1, 4 ounce bar of 100% Cacao (I use Ghirardelli. I think it tastes best. Lindt makes a 90% cacao that’s also very good. And yes, you can use semi-sweet chocolate too, but it has much more sugar!)
  • You’ll also need wax paper and a baking sheet.
Instructions
  1. Line a baking sheet with wax paper.
  2. Melt the chocolate in a microwave safe bowl in the microwave for about 1 minute and check it. If it’s not almost fully melted, heat for an additional 30 seconds, but check it halfway through. When the chocolate is nearly melted, just stir it with a spoon until it’s melted and creamy. Chocolate burns very easily so you don’t want to overheat/scorch it.
  3. Tilt the bowl to make a chocolate puddle and dip the fruit to get a thin, even coating about halfway up. Place dipped fruit on the lined baking sheet. Once the baking sheet is full, place it in the refrigerator to let the chocolate harden. This takes about 10 to 20 minutes.
  4. Note: The key to this is to dip the fruit quickly and let the excess drip back into the bowl. The melted chocolate will start to get thick after about 15 to 20 minutes, so you want to dip the fruit while the chocolate is still in a very liquid state.
