Stuffed Mushrooms

Serves: 8-12
- 24 mushrooms, stems removed
- 2 (10 ounce packages) frozen, chopped spinach (use only 1 package if you don’t want the mushrooms piled high and very stuffed)
- 2 ounces of Neufchatel cream cheese (You can use fat free cream cheese but it’s much more processed.)
- ½ cup of finely chopped green onions with tops (optional)
- 4 ounces of feta cheese
- Preheat oven to 350 degrees
- Wipe mushroom caps with a clean, damp paper towel. Thaw spinach in a colander and squeeze out as much water as possible.
- In a mixing bowl, combine all the ingredients except the mushrooms and mix well.
- Fill the mushroom caps with the mixture and place on a cookie sheet.
- Bake 15-20 minutes. Serve hot.
- Note: The mushrooms can be reheated in a microwave if you have left overs.
