Salmon Croquettes
 
 
(Makes 4 large or 6 small patties)

Ingredients
  • 16 ounce can of salmon
  • ½ cup of chopped onion (If you don’t like onions, leave them out.)
  • ⅔ cup of bread crumbs
  • 2 eggs beaten (sometimes one egg is enough if you use jumbo or extra large eggs)
  • ¼ cup olive oil (You just want enough oil to heat the pan and keep the salmon patties from sticking and burning. I don’t use a quarter cup.)
Instructions
  1. Drain the salmon and save juice in a bowl in case it’s needed later. (I have never needed it to moisten the ingredients more.)
  2. Cook onions in a non-stick pan with no oil until tender. If the onions stick add just a touch of olive oil.
  3. Put the salmon in a large bowl with the beaten eggs, cooked onions and bread crumbs. Mix really well. (I use my hands. It’s easier.)
  4. Make the mixture into patties. (The patties should be moist, not too dry but not too wet. If the patties seem dry, add a little bit of the salmon juice to get the texture right.)
  5. Cook in a pan with about a quarter cup of olive oil (Or enough to make sure the patties don’t burn, I don’t use this much. I eye it.). Cook on medium to medium high heat for about 3 minutes on each side or until the patties have a golden brown color on the bottom, but aren’t burned.
