Ingredients
  • 2 cups baby spinach (raw)
  • 4 grape or cherry tomatoes (cut in half)
  • 2 tablespoons of dried cranberries
  • 2 tablespoons of dried walnuts
  • 2 tablespoons of blue cheese (use low fat if you want to reduce your calories a little)
Instructions
  1. Place the baby spinach on a plate or in a bowl
  2. Top with the other ingredients
  3. Dress with Light and Simple Dijon Vinaigrette
