- 2 cups baby spinach (raw)
- 4 grape or cherry tomatoes (cut in half)
- 2 tablespoons of dried cranberries
- 2 tablespoons of dried walnuts
- 2 tablespoons of blue cheese (use low fat if you want to reduce your calories a little)
- Place the baby spinach on a plate or in a bowl
- Top with the other ingredients
- Dress with Light and Simple Dijon Vinaigrette
