Note: This doesn’t look appealing. But it is tasty and much healthier than traditional pudding. It looks a bit like tapioca pudding (but I can’t tell you if it tastes like that since I’ve never had it.) Also, I tried making this with skim milk and it didn’t work. Other recipes I’ve seen use almond milk.

Ingredients
¼ cup chia seeds
¾ cup fat free half and half
1 tablespoon of unsweetened cocoa powder
1 teaspoon of Stevia or Truvia
Instructions
Combine the chia seeds and fat free half and half with a whisk.
Stir in the cocoa powder and Stevia (or Truvia.)
Let the mixture sit overnight until it has thickened.
Stir and spoon into a bowl or bowls.
