Herbed Swai with Sauteed Onions and Garlic

Serves: 2-4
Ingredients
  • 1 pound of thawed Swai Fillets (I get this at Kroger)
  • ¼ cup chopped onion
  • 2-3 cloves of minced fresh garlic
  • 2 tablespoons unsalted butter
  • ½ teaspoon dried tarragon
  • ¼ teasoon of dried thyme
  • Dash of black pepper
Instructions
  1. Preheat oven to 450 degrees.
  2. Lightly spray a cookie sheet with cooking spray.
  3. Place the Swai fillets on the sheet.
  4. Cook the onion and garlic in the butter until tender.
  5. Stir in the seasonings and cook one minute longer.
  6. Spread mixture over the fillets.
  7. Bake fillets at 450 degrees for about 8-12 minutes depending on thickness. (Check the fillets at 8 minutes by putting a fork in the center/thickest part. The fillets are done when the fish is easy to flake with the fork.)
