Zucchini Nut Bread

Ingredients
  • 3 cups of whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup all natural applesauce (no sugar added)
  • 4 tablespoons Stevia or Truvia
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts
Instructions
  1. Spray two 8 x4 inch or 9x6 inch bread pans with cooking spray.
  2. Preheat oven to 325 degrees.
  3. Put flour, salt, baking powder, baking soda and cinnamon in a bowl and mix together.
  4. Beat eggs, applesauce, vanilla, and Stevia together in a large bowl.
  5. Gradually add sifted ingredients to creamed mixture and beat well.
  6. Stir in zucchini and nuts until fully combined.
  7. Pour half of the mixture into each of the two pans and shake to make the batter evenly distributed.
  8. Bake for 30-35 minutes if you use the larger pan size or 35-45 minutes for the smaller pan size or until golden brown on top and a toothpick inserted into the center of the loaf comes out clean.
  9. Cool in pan about 20 minutes.
  10. Remove the loaves from the pans and allow them to cool completely (or eat a piece while it’s warm!)
  11. If the loaves stick to the pan, just run a firm spatula or knife around the edges to help them come out.
