Whole Wheat Pancakes with Chia Seeds and Oats

Ingredients
  • 1 cup of whole wheat flour
  • ½ cup of old fashioned oats (not quick oats)
  • 1 cup skim milk
  • 1 egg
  • 1 tablespoon canola oil
  • ½ teaspoon pumpkin pie spice (I use about a teaspoon since I really like those spices)
  • 1 ½ teaspoons baking powder
  • 1 tablespoon of chia seeds (plus more for garnish if you’d like)
  • Fresh berries for garnish
Instructions
  1. Spray your griddle or pan with cooking spray and heat to medium heat.
  2. Beat the egg, oil and milk in a bowl.
  3. In a separate bowl, combine the flour, oats, pumpkin pie spice, and baking powder.
  4. Slowly stir the dry ingredients into the wet ones.
  5. Add the chia seeds right before you’re ready to scoop the batter on the griddle or in your pan.
  6. Mix the seed through the batter.
  7. Using a ¼ cup, pour batter in cup onto the griddle and cook until the edges of the pancakes start to bubble and the bottoms are light brown. Flip and cook until the centers are completely done (about 3 to 4 minutes.) Top with chia seed and/or fresh fruit to garnish.
