Blueberry Orange Bread

Serves: 10-12 slices
Ingredients
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup water
  • 2 tablespoons butter, softened
  • 1 tablespoon Stevia (or Truvia if you don’t have Stevia)
  • 1 large egg
  • 1 orange, peeled and cut into small pieces, about ¼ inch by 1 inch
  • 1 strip of orange rind, about ¼ inch wide and 3 inches long cut to the size of the orange pieces
  • 1 cup fresh or frozen blueberries, thawed
Instructions
  1. Preheat oven to 325 degrees
  2. Spray a 9 inch by 5 inch (or whatever you have) bread pan with cooking spray
  3. Mix the whole wheat flour, baking soda, baking powder, salt in a large bowl.
  4. In your food processor, place the following ingredients into it in this order: water, butter, Stevia, egg, orange pieces and orange rind. Blend until the mixture is a smooth liquid. You may need to pulse your food processor to get the oranges to puree. NOTE: If you own a Vitamix or a Ninja, this mixture blends much better.
  5. Pour the orange mixture over the dry mixture and mix by hand with a spatula until all ingredients are moistened. Note: I find it’s easier to knead this with my hands. Once the dry and wet mixture are fully incorporated, fold in the blueberries with a spatula or your hands.
  6. Pour into the prepared bread pan.
  7. Bake for 45 to 55 minutes or until toothpick inserted into the center of the bread loaf comes out clean.
